Pulp or no pulp: how to choose

By hilling · · 1 minute

Choose pulp based on the texture you want, not on the idea that one style is automatically better. Pulp can give a drink more body. A finer strain can make it easier to sip through a narrow opening.

If you are making a batch at home, strain only half. Pour the two versions into similar glasses and taste them side by side. Notice the finish as well as the first sip; texture can linger after the flavor fades.

A coarse kitchen sieve and a fine mesh strainer will not give identical results. Avoid squeezing the remaining pulp hard if your goal is a lighter texture. If you are buying a bottle, look for a clear description rather than guessing from a photograph.
