A small homemade ginger-citrus test batch
By hilling · · 1 minute
For a small home experiment, start with four tablespoons of orange juice, one teaspoon of lemon juice, and half a teaspoon of finely grated ginger. Stir, taste, and strain if you prefer a smoother drink.
This is a starting formula, not hilling's production recipe. Fresh ingredients vary, and grated ginger behaves differently from pressed ginger juice. Add another small amount of ginger only after tasting the first version.
Make just enough to judge the flavor before scaling up. Use clean utensils and washed produce, and remember that homemade raw juice is not pasteurized. If you want to compare changes, divide the base between two glasses and adjust only one. Keep a note of the version you would actually make again.
