Scaling one glass into a pitcher

By hilling · · 1 minute

Scale a drink by multiplying its measured ingredients, then check the flavor before serving. A recipe that says “a splash” is difficult to multiply reliably.

If one glass uses one ounce of base and five ounces of water, six glasses need six ounces of base and thirty ounces of water. Keep any ice separate from that calculation unless you deliberately measured melted ice as part of the recipe.

For sparkling drinks, prepare the still ingredients first and add the bubbles close to serving. Taste a small sample before combining the full pitcher, especially if you are using a new batch of fruit. Leave enough headroom to stir gently. A pitcher filled to the rim is hard to mix and even harder to carry.
