Fresh ginger vs ground ginger in drinks

By hilling · · 1 minute

Fresh ginger and ground ginger are not one-for-one substitutes in a cold drink. Ground ginger is a dry powder, so it changes the texture as well as the flavor. It can remain noticeable even after stirring.

If a recipe calls for fresh ginger juice, using the same spoonful of powder is unlikely to give the same result. Start with a very small amount in a separate test glass, or choose a recipe written for ground ginger.

Fresh ginger is useful when you want to press, grate, or blend it. Ground ginger is handy for many cooked recipes and spice mixes. Neither needs to impersonate the other. For a drink with a smooth finish, strain the fresh preparation to the texture you prefer.
