Bitter, sour, and spicy are different

By hilling · · 1 minute

Bitter, sour, and spicy describe different experiences. Lemon often supplies a sour edge. Citrus peel can add bitterness. Ginger can bring a warming or prickly sensation. Calling all three “bitter” makes a recipe harder to adjust.

Taste a small amount and name the part you dislike. Is it puckering your mouth? Is there a peel-like aftertaste? Or is the ginger simply too intense? You can still dislike it without finding the perfect word, but one clear description helps.

For a homemade drink, change one thing at a time. Remove excess pith from citrus, use less lemon, or dilute the ginger base. Do not add three fixes together; you will lose track of which one worked.
